Aged Balsamic Vinegar

Modena, Emilia-Romagna

From the historic cellars of Modena, where grapes, wood, time, and patience come together over years and decades. Our balsamic vinegars are traditionally aged — not industrially produced — and carry the DOP designation that guarantees their origin and method.

Our standard

Minimum 12 years aged. Traditional method. DOP certified.

Traditional balsamic vinegar from Modena is one of the most misunderstood luxury foods in the world. The name "balsamic" has been applied to industrial products that bear no relationship to the original — a slow, patient, extraordinary process of cooking grape must, then aging it through a series of wooden barrels over a minimum of twelve years. The result is something entirely unlike vinegar in the common sense: thick, complex, sweet and sour in perfect balance, with a depth that only time can create.

What defines this category

Minimum 12 years aged in traditional barrel series
Traditional method (Tradizionale) DOP certified
Grape must from Trebbiano and Lambrusco grapes
Aged in progressively smaller barrels of different woods
Each bottle certified and numbered by the Modena consortium

How we select

We offer only Aceto Balsamico Tradizionale di Modena DOP — the designation that guarantees traditional production and minimum aging. We do not offer commercial balsamic or IGP-grade products.

Our producers

Our balsamic comes from historic acetaie in Modena — family operations where the barrel series have been maintained across generations. Some of the barrels in use today were started by the great-grandparents of the current producers.
